- Fresh herbs (basil, mint, cilantro) - 1 cup, chopped
- Fish sauce - 4 tbsp
- Lime juice - 2 tbsp
- Garlic - 3 cloves, minced
- Red chili - 1, sliced
- Carrot - 1, julienned
- Cucumber - 1, thinly sliced
- Bean sprouts - 1 cup
- Peanuts - 1/2 cup, crushed
- Olive oil - 2 tbsp
- Soy sauce - 2 tbsp
- Salt and black pepper to taste
Preparation
Step 1: Preparing the Shrimp
In a bowl, marinate the shrimp with garlic, lime juice, fish sauce, and a pinch of salt for 15 minutes.
Step 2: Cooking the Vermicelli Noodles
Bring a pot of water to a boil. Add the vermicelli noodles and cook according to package instructions or until tender. Drain and rinse under cold water to stop the cooking process.
Step 3: Sautéing the Shrimp
Heat olive oil in a skillet over medium heat. Add the marinated shrimp and cook on each side for 2-3 minutes or until they are pink and opaque. Set aside.
Step 4: Preparing the Fresh Ingredients
With a precision knife, julienne the carrot and thinly slice the cucumber. Set them aside with the bean sprouts for assembly.
Assembly
In large serving bowls, create a bed with the cooked vermicelli noodles. Top the noodles with sautéed shrimp, julienned carrots, cucumber slices, and bean sprouts. Garnish generously with fresh herbs and crushed peanuts.
Flavor Enhancement
Mix together soy sauce, additional lime juice, a splash of fish sauce, and slices of red chili to create a zesty dressing. Drizzle the dressing over the assembled dish before serving.
Cooking Time
For optimal results, ensure the shrimp is cooked just enough to maintain its juiciness while not overpowering the delicate ingredients. The overall cooking time should not exceed 25 minutes.
