- Mustard Seeds - 1 teaspoon
- Curry Leaves - a handful
- Peanuts - 2 tablespoons
- Oil - 2 tablespoons
- Dry Red Chillies - 3 to 4
- Asafoetida - a pinch
- Water - as needed
- Fresh Coconut - 2 tablespoons (grated)
- Coriander Leaves - for garnish
Preparation
The preparation of Huli Avalakki starts with the soaking of the tamarind. Take the tamarind and soak it in a cup of water for about 20 minutes. Once soaked, extract the juice and keep it aside. The next step is to rinse the flattened rice under running water briefly, ensuring it becomes soft but not mushy. Drain the water completely and set it aside.
Cooking Method
1. In a pan, heat oil over medium flame. Once hot, add mustard seeds and allow them to splutter.
2. Add the peanuts and roast them until they become golden brown.
3. Introduce the curry leaves and dry red chillies, sautéing them until aromatic.
4. Add a pinch of asafoetida for enhancing the overall flavor.
5. Pour in the extracted tamarind juice.
6. Add salt to taste, turmeric powder, and sambar powder to the mix.
7. Stir in the jaggery, allowing it to melt and combine with other spices.
8. Once the mixture begins to thicken, add the soaked flattened rice and mix well.
9. Cook the mixture for a few minutes, letting the flattened rice absorb all the flavors, adding water if necessary, and adjust the cooking time accordingly.
Serving Suggestions
