Huli Gojju Recipe

Preparation
To prepare the tamarind, soak it in warm water for about 20 minutes. Once it is soft, squeeze out the pulp and discard the solids.
In a pan, dry roast the spices including coriander seeds, cumin seeds, mustard seeds, and red chilies until they emit a fragrant aroma. Allow them to cool, then grind into a fine powder.
Cooking Instructions
- In a deep pan, heat oil over medium heat. Add a pinch of asafoetida and the curry leaves. Sauté for a few seconds until the leaves are crisp.
