- Curry powder - 2 tablespoons
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Oil - 3 tablespoons
- Water - 2 cups
- Fresh coriander - for garnish
- Chili - 1, sliced
- Tomato - 1 large, chopped
- Lime - 1, cut into wedges
Preparation
- Begin by thoroughly rinsing the rice under cold water until it runs clear to remove excess starch. Set aside.
- Chop the onion finely, and mince the garlic. Grate the ginger and keep all these aromatics ready for cooking.
- Cut the chicken into bite-sized pieces.
Cooking Process
- Heat the oil in a large pot over medium heat.
- Add the onion and sauté until it becomes translucent. Throw in the garlic and ginger and sauté for another 2 minutes until fragrant.
- Stir in the curry powder, cumin, and turmeric, allowing the spices to bloom for a minute.
