Originally, kubbeh emerged as a practical way to utilize available ingredients like bulgur and meat, forming a versatile dish that could be adapted to various fillings and spices. Over time, this dish has evolved, with each community adding its distinctive touch through different fillings, spices, and cooking methods. Today, Jerusalem Kubbeh Delight brings a modern twist to this traditional dish, delighting food enthusiasts with its balanced blend of spices and flavors.
Ingredients
- Bulgur - 2 cups
- Ground beef - 1 pound
- Onion - 1 large, finely chopped
- Olive oil - 2 tablespoons
- Pine nuts - 1/2 cup, toasted
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Flour - 1/2 cup
- Warm water - as needed
- Lemon - 1, juiced
- Tahini - 1/2 cup
- Parsley - 1 bunch, chopped
Preparation
Step 1: Prepare the Bulgur
Rinse the bulgur thoroughly under cold water until the water runs clear. Soak it in warm water for about 30 minutes until softened. Drain any excess water and set it aside.
Step 2: Make the Filling
In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and sauté until it becomes translucent. Add the ground beef and cook until browned, breaking it apart as it cooks. Stir in the pine nuts, cinnamon, cumin, allspice, salt, and pepper. Cook for another 5 minutes to allow the flavors to meld. Remove from heat and cool slightly.
Step 3: Form the Kubbeh
In a large bowl, combine the soaked bulgur with the cooled meat mixture. Add flour and mix until it forms a pliable dough. If needed, add a little warm water to achieve the right consistency. Take a small ball of dough and flatten it into a patty. Place about a tablespoon of the meat filling in the center, fold the dough over, and shape it into an oval or torpedo shape, ensuring the filling is completely encased. Repeat with the remaining ingredients.
Cooking Process
Heat the remaining tablespoon of olive oil in a heavy-bottomed skillet over medium heat. Working in batches, add the kubbeh to the skillet and fry until golden brown on both sides, about 3-4 minutes per side. Alternatively, for a healthier option, you can bake them on a parchment-lined baking sheet at 375°F (190°C) for 25-30 minutes, turning halfway through cooking.
