A Traditional Treat with a Modern Twist

Jiangsu Rum Mooncakes are a modern variation of a classic Chinese delicacy traditionally enjoyed during the Mid-Autumn Festival. Mooncakes have a rich history tracing back to the Yuan dynasty, where they were purportedly used to pass secret messages between revolutionaries. Typically, these pastries are round or square in shape, symbolizing unity and togetherness.

Ingredients

• All-purpose flour - 250g
• Golden syrup - 160g
• Lye water - 1 tsp
• Vegetable oil - 60g
• Red bean paste - 300g
• White rum - 30ml
• Salted egg yolk - 4 pieces
• Egg wash (1 egg yolk + 1 tbsp water)

Preparation

Step 1: Prepare the Mooncake Skin

In a large mixing bowl, combine golden syrup, lye water, and vegetable oil. Mix until thoroughly combined. Gradually add all-purpose flour into the mixture. Knead until you form a smooth dough. Cover with plastic wrap and rest for 30 minutes.

Step 2: Prepare the Filling

While the dough is resting, mix the red bean paste with white rum until the flavor is uniformly blended. This can be done by hand or with a food processor for finer consistency.

Step 3: Assembling the Mooncakes

Preheat your oven according to your cooking timer instructions to 180°C (356°F). Divide the rested dough and the red bean paste filling into equal portions, around 30g each.

Flatten a piece of dough into a circle, place a piece of salted egg yolk and wrap it with a portion of the red bean paste filling. Carefully encase the filling with the dough, rolling it gently into a ball. Place into mooncake mold and press to shape.

Step 4: Baking the Mooncakes

Place the molded mooncakes on a baking tray lined with parchment paper. Use a brush to apply a thin layer of egg wash over the top to ensure a golden finish. Bake on the center rack as per your cooking timer instructions for about 10 minutes until light golden brown.

Step 5: Resting the Mooncakes

Remove the mooncakes from the oven and allow them to cool completely. Store them in an airtight container for 1-2 days; this rest period will allow the crust to become soft and flavorful.
