Kakun Seluk

Ingredients
- Chicken - 1 kg cut into sizeable pieces
- Coconut Milk - 500 ml
- Turmeric Powder - 1 tablespoon
- Lemongrass - 2 stalks, bruised
- Ginger - 2 inches, sliced
- Garlic - 4 cloves, minced
- Onion - 1 large, finely chopped
- Bay Leaves - 2
- Red Chili - 3, chopped
- Salt - to taste
- Oil - 3 tablespoons
- Lime - 1, juiced
Preparation
Prepare the Ingredients
- Start by washing the chicken thoroughly and cutting it into sizeable pieces.
- Bruise the lemongrass to release its flavor.
- Slice the ginger and mince the garlic.
- Chop the onion and the red chilis for the spice paste.
Mix the Spice Paste
- In a blender, combine the turmeric, garlic, ginger, and a portion of the onion.
- Blend into a smooth paste, adding a bit of oil if needed.
- Set aside the paste.
Cooking Process
Sautéing Aromatics
- In a large pan, heat the oil over medium heat.
- Add the remaining onion and sauté until translucent.
- Stir in the prepared spice paste and cook for 5 minutes until fragrant.
- Add the bay leaves and the lemongrass.
Combine Chicken and Coconut Milk
- Add the chicken pieces to the pan, stirring to coat them thoroughly with the spices.
- Pour in the coconut milk, stirring well to mix.
- Bring the mixture to a boil, then reduce the heat and let it simmer gently.
Simmer to Perfection
- Allow the dish to simmer for around 30 minutes or until the chicken is cooked through.
- Add salt to taste and your choice of new heat using more red chili if desired.
- Squeeze in the lime juice to finish.
