Kalaallit Kikkeq
Background and History
Kalaallit Kikkeq, a traditional dish from Greenland, reflects the rich culinary heritage of the Inuit people. Often prepared during special occasions, this dish utilizes the simple yet robust flavors of local ingredients such as lamb fat and dried fish. Its origins date back centuries when hunting and fishing were primary means of sustenance, influencing the methods and ingredients used in Greenlandic cooking.
Ingredients
- Lamb Fat - 200 grams
- Dried Fish - 300 grams
- Potatoes - 4 large
- Water - 2 liters
- Salt - To taste
- Pepper - To taste
- Onion - 1 large
- Fresh Greenery (such as chives or parsley) - For garnish
Preparation
Preparing the Ingredients
Start by cutting the lamb fat into small, manageable pieces. This will help in rendering the fat evenly. Rinse the dried fish under cold water to remove any excess salt and impurities. Slice the onion thinly and set aside. Peel and cube the potatoes.
Combining the Ingredients
In a large pot, add the water and bring it to a boil. Add the potatoes and salt to taste. Boil until the potatoes are just about tender, which usually takes around 15 minutes. Add the pieces of dried fish, reduce heat and let it simmer for another 10 minutes.
Cooking Process
Rendering the Fat
In a separate pan, render the lamb fat over medium heat until it melts into a golden liquid. Be attentive to ensure it doesn't burn. Once rendered, remove any solid remnants to leave just the liquid fat.
Finishing the Dish
Carefully strain the boiled potatoes and fish and combine with the liquid lamb fat. Add the sliced onion and let the mixture infuse together over low heat for about 5-10 minutes, stirring occasionally. If necessary, season with additional salt and pepper.
