Kanafeh Nabulsieh

Kanafeh Nabulsieh is a traditional Middle Eastern dessert that originated in the city of Nablus, located in the northern part of the West Bank in Palestine. Known for its rich history and cultural significance, this dessert has become a staple in many Middle Eastern countries. Characterized by its thin, noodle-like pastry crust and cheese filling, Kanafeh Nabulsieh is often enjoyed during celebrations and special occasions.

Ingredients

Preparation

Step 1: Prepare the Syrup

In a saucepan, combine sugar, water, and lemon juice. Bring to a boil and ensure the sugar is completely dissolved. Once done, remove from heat and stir in rose water and orange blossom water. Set aside to cool.

Step 2: Prepare the Cheese

Soak the Nabulsi cheese in water to desalt it for about an hour. Alternatively, you can use Mozzarella Cheese as a substitute. Grate the cheese and set aside.

Step 3: Prepare the Phyllo Dough

Preheat the oven to 350°F (175°C). Use a large bowl to shred the phyllo dough (Kataifi) into small pieces. Melt the unsalted butter and pour over the shredded phyllo dough. Mix thoroughly to ensure the phyllo dough is well-coated.

Cooking Process

Step 4: Assemble the Kanafeh

In a greased baking pan, evenly spread half of the phyllo dough mixture. Press it down firmly to create an even layer. Evenly distribute the grated Nabulsi cheese or Mozzarella Cheese over the first layer of phyllo dough. Top with the remaining half of the phyllo dough, pressing down gently to ensure it adheres to the cheese layer.

Step 5: Baking

Place the pan in the preheated oven and bake for 30-35 minutes, or until the top layer is a golden-brown color. Adjust the cooking timer if needed.

Step 6: Adding the Syrup

Once the Kanafeh is baked, remove it from the oven. Immediately pour the cooled syrup over the hot Kanafeh, ensuring even distribution. Allow it to soak in for a few minutes before serving.

Serving and Enjoyment

Before serving, garnish with pistachios for an added crunch and flavor. Kanafeh Nabulsieh is best enjoyed warm, allowing the cheese to remain soft and gooey. It pairs well with a cup of Arab coffee or tea, making for a delightful ending to any meal.
