Preparation
Preparing the Sprouted Lentils
Soak sprouted lentils overnight in water.
Drain the water and set the beans aside for sprouting. This typically takes about 12-15 hours, depending on the climate.
Making the Lahsuni Masala
In a blender, add coconut, ginger, and green chilies to make a smooth paste. This will serve as the base of our masala.
Cooking Process
Making the Misal
In a deep pan, heat oil over medium heat. Add mustard seeds and allow them to splutter.
Add cumin seeds and a pinch of asafetida.
Sauté the chopped garlic until golden brown. Add the chopped onions and cook until they turn translucent.
Add the tomatoes and cook till they become soft.
Mix in the curry base paste, stirring well to combine.
Include sprouted lentils with a cup of water. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt to taste.
Bring the mixture to a boil, then lower the heat and allow it to simmer for at least 20 minutes, or until the beans are cooked through. Make sure to keep an eye on the cooking time to achieve the perfect texture.
Simmer until you reach a slightly thick consistency.
