Kangaroo Hillside Tart
The kangaroo hillside tart is an intriguing blend of traditional savory pie recipes with a unique twist of game meat. Originating from the kangaroo-laden hills of Australia, this dish celebrates the rich tastes and cultural influences that this part of the world delivers. Historically, indigenous Australians have leaned heavily on kangaroo meat as a staple in their diet, given its availability and rich protein content. The modern adaptation, combined with influences from European settlers, gives us the kangaroo hillside tart – a delightful venture into culinary innovation.
Ingredients
- Kangaroo Meat - 500g, minced
- Flour - 300g
- Butter - 150g, chilled and cubed
- Onion - 1 large, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1, diced
- Potato - 1, diced
- Peas - 100g
- Thyme - 1 teaspoon, fresh
- Rosemary - 1 teaspoon, dried
- Egg - 1, beaten
- Milk - 2 tablespoons
- Salt - 1 teaspoon
- Pepper - 1 teaspoon
Preparation
To begin with the kangaroo meat, ensure it's thawed appropriately if previously frozen. It’s important because cooking the meat from frozen can result in uneven cooking, which might affect the tart's flavor and texture.
Making the Pastry
- In a large bowl, combine flour with a pinch of salt.
- Add butter cubes and rub them into the flour using your fingertips until the mixture resembles fine breadcrumbs.
- Add a splash of cold water, a tablespoon at a time, and mix until the dough comes together. Wrap the dough in cling film and chill for at least 30 minutes.
Preparing the Filling
- Heat a drizzle of oil in a large skillet over medium heat.
- Add the onion and garlic, sautéing until softened.
- Stir in the carrot and potato, cooking for 5 minutes until they start to soften.
- Add in the kangaroo meat, browning it thoroughly.
- Mix in the peas, thyme, rosemary, salt, and pepper.
Cooking Process
- Preheat your oven to 200°C (390°F).
- Roll out two-thirds of the pastry on a floured surface and line a 23cm pie dish.
- Spoon the filling into the pastry-lined dish.
- Roll out the remaining pastry and place it over the filling, trimming the excess.
- Crimp the edges to seal, then brush with a mixture of beaten egg and milk to give it a golden crust.
- Cut a few vents in the top to allow steam to escape.
- Bake in the preheated oven for 35-40 minutes until the pastry is golden brown.
Enjoying the Meal
Let the tart cool for about 10 minutes before slicing. This dish pairs beautifully with a fresh green salad or seasonal vegetables. For a more traditional touch, serve with a side of rich gravy. Use a cooking timer to ensure everything is spot-on and consider a simple salt and pepper seasoning on the sides to enhance natural flavors. Enjoy your kangaroo hillside tart as a delightful tribute to the culinary fusions that make Australian cuisine so unique!
