Ingredients
- Quince - 2 large, peeled, cored, and cubed
- Sugar - 200g

Preparation
Step 1: Prepare the Quince
Begin by preparing the quince. Peel and core your quinces, then cube them into small pieces. This ensures they cook evenly and blend seamlessly into the cake mixture. Place them in a pot, cover with water, and add 100g of sugar. Cook over medium heat until they become soft and slightly caramelized. This can take about 15 to 20 minutes. Once ready, drain them and set aside to cool.
Step 2: Mix the Wet Ingredients
In a large mixing bowl, beat butter and the remaining 100g of sugar together until creamy. Add the eggs, one at a time, mixing well after each addition. This process should yield a smooth, pale mixture. Stir in the vanilla extract for that aromatic essence.

In a separate bowl, sift together flour, baking powder, and a pinch of salt. Add the cinnamon to the dry ingredients, stirring until evenly distributed.
