Ingredients

Preparation
Prepare the Sushi Rice
- Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
- Combine the rinsed rice with 2.5 cups of water in a rice cooker or a medium saucepan. Cook according to the rice cooker instructions or, if using a saucepan, bring to a boil, then lower the heat, cover, and simmer for about 15 minutes.
- Once cooked, let the rice rest for 10 minutes. Meanwhile, mix the rice vinegar, sugar, and salt until fully dissolved.
- Transfer the cooked rice to a wooden or non-metallic bowl, and fold in the vinegar mixture gently but thoroughly until the rice has an even sheen and is cool to the touch.

- Soak the pickled sakura blossoms in warm water for 30 minutes to remove excess salt. Drain and pat dry gently.
- Slice the cucumber and avocado into thin, even strips.
- Cut the fresh salmon into small, bite-sized pieces.
- Cut the nori sheets into thin strips, about 1 inch wide.

- On a large plate, spread a thin layer of the prepared sushi rice as a base.
