Ingredients
- Sushi Rice - 2 cups

Preparation
Step 1: Prepare the Rice
Start by rinsing sushi rice under cold water until the water runs clear. Cook it using 2 cups of water in a rice cooker. Once done, transfer to a bowl, and add rice vinegar, mixing gently to avoid mashing the grains. Set it aside to cool.
Step 2: Marinate the Salmon
While the rice is cooking, slice the salmon into thin strips. In a bowl, mix soy sauce, mirin, and half of the sake. Add the salmon slices, coating them evenly. Let them marinate for about 20 minutes.
Step 3: Prepare the Vegetables
Clean the shiitake mushrooms and slice thinly. Chop green onion into small rings. Peel and grate the ginger.
Cooking Process
Step 1: Sauté the Mushrooms
Heat sesame oil in a pan over medium heat. Add the sliced shiitake mushrooms, sautéing until they are tender and fragrant. Pour in remaining sake and continue to cook for an additional 2 minutes.
Step 2: Assemble the Dish
On a serving tray, lay out the seasoned sushi rice. Arrange the marinated salmon strips over the rice, and top with sautéed shiitake mushrooms, cucumber, green onion, and grated ginger. Sprinkle a generous amount of sesame seeds over the top.
Step 3: Serve with Flair
Garnish the Kyoto Temptation with sliced pickled radish and pieces of nori for added flavor and presentation. Serve accompanied by a small dollop of wasabi on the side.
