Introduction to Kystybyi
Kystybyi is a traditional dish native to the Tatar and Bashkir cuisines, primarily found in regions such as Tatarstan and Bashkortostan in Russia. This savory treat consists of a flatbread, often referred to as "yuka," which is filled with creamy mashed potatoes. Ingredients
- Flour - 500g
- Water - 300ml
- Salt - 1 tsp
- Butter - 50g
- Egg yolk - 1
- Potatoes - 1kg
- Milk - 150ml
- Additional butter for mashed potatoes - 50g
- Black pepper to taste
Instructions
Preparing the Dough
- In a large bowl, combine flour and salt.
- Add water gradually, mixing until a dough forms.
- Incorporate butter and knead the dough until it is smooth and elastic. This should take about 10 minutes.
- Wrap the dough in a damp cloth and let it rest for 30 minutes.
Preparing the Mashed Potato Filling
- Peel and cube the potatoes.
- Boil the potatoes in salted water until tender, then drain well.
- In a mixing bowl, mash the potatoes.
- Heat milk and butter in a small saucepan until the butter melts, then stir this mixture into the mashed potatoes.
- Season with salt and black pepper to taste.
Rolling Out and Cooking the Flatbreads
- Divide the dough into 10 equal parts and roll each into a ball.
- On a floured surface, roll each ball into a thin circle, about 20 cm in diameter.
- Heat a dry skillet over medium heat, then cook each flatbread for 1-2 minutes on each side until golden brown spots appear.
- Keep the flatbreads warm by covering them with a clean towel as you cook the remaining dough.
Assembling Kystybyi
- Place a generous amount of the mashed potato filling on one half of each flatbread.
- Fold the flatbread in half to cover the filling.
- Press gently to adhere the edges.
- Optionally, brush the tops with melted butter for added flavor.
