  4. Chop the tomatoes and slit the green chilies for adding later in the cooking.

Cooking Process

Now that the ingredients are prepared, we can proceed with cooking Matafi. This process should take about 1 to 1.5 hours. Don't forget to keep your cooking timer handy to ensure precision and avoid overcooking.

  1. In a large pot, heat oil over medium heat.
  2. Add the chopped onions and sauté until golden brown. This should take approximately 10 minutes.
  3. Stir in the garlic and ginger, cooking until fragrant, which should be about 2 minutes.
  4. Add the chopped tomatoes and slit green chilies, cook until the tomatoes are soft and blend well with the onions.
  5. Add the marinated chicken to the mixture, along with the marinade juices. Stir well to combine all ingredients.
  6. Cook the chicken on medium heat until it's opaque and partially cooked, approximately 15-20 minutes.
  7. Add 4 cups of water to the pot and bring it to a boil.
  8. Once boiling, add in the soaked rice and season with salt.
  9. Cover the pot, reducing the heat to a simmer. Let it cook for about 20 minutes or until the rice absorbs all the water and the chicken is fully cooked through.
  10. Once done, remove the pot from heat and allow it to rest covered for another 10 minutes.

How to Enjoy Matafi

Garnish your Matafi with a generous handful of chopped fresh coriander leaves and fresh mint leaves before serving. Matafi can be served with a side of refreshing salad or a bowl of yogurt mixed with diced cucumbers and a sprinkle of cumin powder.
