Matalassos is a traditional dish from the picturesque region of Catalonia in Spain. Known for its rich culinary heritage, Catalonia's dishes reflect a fusion of flavors inspired by the Mediterranean and the Pyrenees. Matalassos is a comforting, layered dish reminiscent of a savory bread pudding, traditionally made to use up day-old bread and various ingredients that were readily available in Catalan homes.
Ingredients
- Bread (preferably day-old) - 500g
- Milk - 1 liter
- Eggs - 4 whole
- Sugar - 100g
- Butter - 50g
- Cinnamon - 1 teaspoon
- Nutmeg - 1/2 teaspoon
- Vanilla Extract - 1 teaspoon
- Raisins - 100g
- Almonds, sliced - 50g
- Lemon Zest - from 1 lemon
Preparation
The key to perfect Matalassos lies in its preparation. Start by gathering all your ingredients to ensure a smooth cooking process. Particularly if you make it for the first time, also have your cooking timer ready to keep track of all the necessary steps.
Step 1: Preparing the Bread
Bread is the base of our Matalassos, so begin by cutting your day-old bread into 2cm cubes. The slightly hardened nature of day-old bread allows it to soak up the flavors without becoming too soggy.
Step 2: Making the Custard
In a large mixing bowl, crack four eggs and whisk them together with sugar until well combined. Gradually add in the milk, continuing to whisk until the mixture is smooth. Stir in vanilla extract, cinnamon, nutmeg, and fresh lemon zest.
Step 3: Assembling the Dish
Preheat your oven to 180°C (356°F). Grease a baking dish with butter, ensuring all sides are coated. Layer half of the cubed bread evenly in the dish. Sprinkle half of the raisins and half of the almonds over the bread layer. Repeat with the remaining bread, raisins, and almonds.
Carefully pour the custard mixture over the layers of bread, ensuring it is evenly distributed. Allow it to sit for about 15 minutes so the bread can absorb the custard.
Cooking Process
Step 4: Baking
Place your dish in the preheated oven. Bake for about 45 minutes or until the top turns a nice golden brown. You can check if it's done by inserting a toothpick into the center. If it comes out clean, your Matalassos is ready.
If the top is browning too quickly, you can cover it with aluminum foil midway through baking.
Step 5: Final Touches
Once baked, remove the Matalassos from the oven and let it cool slightly before serving. For a glossy finish, you can melt some additional butter and brush it over the top.
