- Cinnamon - 1 tsp

Preparation
Preparing the Layers for Medimurska Gibanica
- In a large bowl, mix the cottage cheese, 100g of sugar, and vanilla extract until smooth. This will be your cheese layer.
- In another bowl, combine the poppy seeds with a bit of milk to form a paste for the poppy seed layer.
- Mix the grated apples with 50g of sugar and cinnamon in a separate bowl for the apple layer.
- Combine the ground walnuts with 50g of sugar for the walnut layer.
- Beat the eggs and mix with the remaining milk and cream. This will be the binding liquid used while layering.
Assembling the Medimurska Gibanica
- Preheat your oven to 180°C (356°F).
- Generously grease a baking dish with butter.
- Layer three sheets of phyllo dough, brushing each with melted butter.
- Spread the cottage cheese mixture over the phyllo dough.
- Cover with another two sheets of phyllo dough, brushing with butter.
- Spread the poppy seed paste as the next layer.
- Add two more sheets of phyllo dough, followed by the walnut mixture.
- Repeat with two sheets of phyllo dough and top with the apple mixture.
- Finish with three sheets of phyllo dough, carefully brushed with butter.
- Pour the beaten egg mixture evenly over the top to soak through the layers.
Cooking Instructions
Let the assembled Medimurska Gibanica rest briefly to let it absorb the flavors and the egg mixture.
- Place the baking dish in the preheated oven.
- Bake for approximately 45-50 minutes, or until the top is golden brown and crisp.
- Check the dish at the 30-minute mark and rotate it to ensure even baking.
- A knife should come out clean when checking the center of the cake.
