Misti Morsels
Background
Misti Morsels are a delightful confectionery inspired by the traditional sweets from the Bengal region of India. Known for their rich sweetness and distinctive flavors, these morsels are a true representation of the region's love for food that brings comfort and joy. The word 'Misti' translates to sweet in Bengali, and these morsels certainly live up to their name. Traditionally enjoyed during festivals and celebrations, Misti Morsels now find their place in everyday indulgence for those with a sweet tooth.
Ingredients
- Milk - 1 liter
- Sugar - 200 grams
- Cardamom - 2 pods
- Ghee - 2 tablespoons
- Saffron - a pinch
- Semolina - 150 grams
- Pistachios - 50 grams, chopped
- Almonds - 50 grams, chopped
Preparation
Step 1: Prepping The Ingredients
Start by collecting and measuring all the necessary ingredients: milk, sugar, cardamom, ghee, saffron, semolina, pistachios, and almonds. This will help ensure a smooth cooking process. Crush the cardamom pods and soak the saffron strands in a tablespoon of warm milk for enhanced flavor.
Cooking Process
Step 2: Making the Base
Pour the full liter of milk into a deep pan and bring it to a boil. Once boiling, reduce the heat to a gentle simmer. Stir frequently to prevent the milk from sticking to the bottom. After about 10 minutes, add the cardamom and let the flavors infuse for another 5 minutes.
Step 3: Adding Key Ingredients
Add the sugar and continue to stir until it dissolves completely. Gradually sprinkle in the semolina while stirring to prevent any lumps from forming. The mixture will start to thicken as it absorbs the milk and the flavors meld together.
Step 4: Consistency Check
Allow the mixture to simmer gently for another 10-15 minutes, stirring consistently. A thickened, cohesive mass should form. If using a cooking timer, set it for this critical phase to avoid undercooking or burning the mix.
Step 5: Enriching the Morsels
Add in the soaked saffron and melted ghee, stirring well to combine. The ghee gives the Misti Morsels a rich, glossy finish, while the saffron imparts a warm hue and flavor.
Step 6: Shaping
Once the mixture is ready, take it off the heat. Let it cool slightly and then transfer it to a ghee-greased tray. Press the mixture down evenly to form a flat surface. Sprinkle chopped pistachios and almonds on top, pressing them gently into the surface. Let it set for an hour before cutting into small, neat squares or diamond shapes.
Enjoying the Misti Morsels
These Misti Morsels can be enjoyed as a standalone snack with a cup of tea or as a dessert following a hearty meal. They can also make for a delightful gift wrapped in traditional festive packaging. Whether served during festivals or part of daily indulgence, their sweet, rich flavors are sure to leave a lasting impression.
