Preparation
Marinating the Lamb
Begin by marinating the lamb in yogurt, garlic, cumin, coriander, cinnamon, salt, and black pepper. Ensure the lamb is evenly coated with the mixture. Let it marinate in the refrigerator for at least 2 hours, or overnight for better results.
Cooking the Rice
Rinse the rice under cold water until the water runs clear. This removes excess starch and helps the grains remain separate. In a pot, boil 4 cups of water with a pinch of saffron for color if desired. Add the rice and cook it until it's al dente. Drain and set aside.
Cooking Process
