Preparation
Begin by slicing the eggplants into 1/4-inch thick rounds and sprinkle with salt to draw out moisture. Let them sit for about 30 minutes, then rinse and pat dry with a paper towel. For the tomatoes, blanch them in boiling water for a couple of minutes, then transfer to ice water before peeling and chopping.
Cooking Steps
- In a large skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
- Add garlic and stir for another minute until fragrant. Then, add the ground lamb. Cook until browned, breaking apart the meat with a spatula.
- Stir in chopped tomatoes, cinnamon, and cumin. Season with salt and pepper to taste. Reduce heat and let it simmer for 20 minutes.
