Preparing Vegetable Saagu

  2. Add 1 teaspoon of mustard seeds and 1 teaspoon of cumin seeds. Allow them to splutter.
  3. Add a pinch of asafoetida.
  4. Throw in the slit green chilies, grated ginger, and 1 sprig of curry leaves. Sauté for a minute.
  5. Add the chopped onion and sauté till golden brown.
  6. Introduce the chopped tomato, and cook until soft.
  7. Add 1 teaspoon of coriander powder, 1/2 teaspoon of turmeric powder, and 1 teaspoon of red chili powder. Sauté for another minute.
  8. Mix in the mixed vegetables and stir well.
  9. Cover and cook until the vegetables are tender, adding a splash of water if needed.
  10. Add 1 tablespoon of gram flour dissolved in a little water, cook for another 2 minutes to thicken the saagu.
  11. Stir in 1/2 cup of grated coconut and salt to taste.
  12. Garnish with coriander leaves.
