Preparation
Step 1: Marinate the Chicken
In a large bowl, combine the chicken pieces with salt, black pepper, and thyme. Allow the chicken to marinate for at least 30 minutes to absorb the flavors.
Step 2: Prepare the Vegetables
While the chicken is marinating, chop the onions, garlic, and ginger. Dice the tomatoes and green peppers, and slice the okra. Set aside.
