Mylapore Kao

Mylapore Kao is a traditional South Indian dessert originating from the ancient town of Mylapore, located in the bustling city of Chennai. Known for its vibrant culture and rich history, Mylapore is a tapestry of tradition and culinary artfulness. This dessert dates back to the times when the temple town was a hub of spiritual activity, often enjoyed during festivals and celebrations. The dessert is cherished for its melt-in-the-mouth texture and harmonious blend of sweet and nutty flavors.

Ingredients

Preparation

Before you begin, prepare all ingredients. Ensure the rice flour is sifted to remove any lumps. Chop the cashew nuts into small pieces. Grate or break down the jaggery to facilitate easy melting. Once your ingredients are ready, you can start the cooking process.

Cooking Process

Step 1: Toasting Nuts

Begin by heating a tablespoon of ghee in a pan over medium heat. Add the chopped cashew nuts and fry until they turn a golden brown. Add the raisins and stir for a few seconds until they puff up. Remove both from the pan and set aside.

Step 2: Melting Jaggery

In the same pan, add the remaining ghee and allow it to melt. Once melted, add the grated jaggery along with water. Stir continuously over low heat until the jaggery completely dissolves and forms a smooth syrup. Filter the syrup to remove any impurities and return to the pan.

Step 3: Cooking the Mixture

Gradually add the sifted rice flour to the jaggery syrup, stirring continuously to prevent lumps. Cook the mixture on low heat, stirring until it thickens and leaves the sides of the pan.

Step 4: Adding Flavors and Nuts

Stir in the cardamom powder, fried cashew nuts, and raisins into the mixture. Ensure everything is evenly combined.

Step 5: Shaping the Dessert

Once cooked, let the mixture cool slightly. Grease your palms with some ghee and shape the warm mixture into small balls or discs as per your preference. Allow them to cool completely.

Enjoying Mylapore Kao

Mylapore Kao is best enjoyed when shared amongst family and friends, usually served during festivals or special occasions. Pair it with filter coffee for the authentic South Indian experience. Store any leftovers in an airtight container to maintain their freshness.
