Nevsky Pirozhki

Ingredients
- Flour - 500g
- Milk - 300ml
- Sugar - 2 tablespoons
- Salt - 1 teaspoon
- Butter - 100g
- Yeast - 1 packet
- Egg - 1, beaten
- Ground beef - 400g
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Black pepper - 1 teaspoon
- Vegetable oil - 2 tablespoons
Preparation
Step 1: Prepare the Dough
In a medium-sized bowl, warm the milk to a lukewarm temperature. Be careful not to overheat, as it can affect the yeast.
Dissolve the yeast and sugar in the milk and let it sit for about 10 minutes until it becomes frothy.
In a large mixing bowl, combine the flour and salt. Make a well in the center and pour the frothy yeast mixture in.
Add the melted butter and egg into the well and mix the ingredients together until a soft dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rest and rise in a warm place until it doubles in size, about 1 hour. Use a timer for precision.
Step 2: Prepare the Filling
While the dough is rising, heat the vegetable oil in a skillet over medium heat.
Add the onion and garlic, sautéing until they become translucent.
Add the ground beef to the skillet, cooking until it is browned and cooked through. Season with salt and black pepper to taste.
Remove the mixture from the heat and let it cool completely.
Step 3: Assemble the Pirozhki
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Once the dough has risen, punch it down and transfer it onto a floured work surface. Roll it out to about 1/4 inch thickness.
Using a round cutter or a glass, cut circles out of the dough, about 3 inches in diameter.
Place a spoonful of the cooled filling in the center of each dough circle. Fold the dough in half over the filling to form a crescent shape, pressing the edges firmly together to seal.
Place the pirozhki on the prepared baking sheet, brushing each with the beaten egg to ensure a glossy finish.
Step 4: Bake the Pirozhki
Bake the pirozhki in the preheated oven for 20-25 minutes, or until golden brown. Be sure to set a timer.
