Preparation

In a saucepan, combine the sugar, lemon juice, vanilla seeds and pod, and water. Gently bring the mixture to a boil over medium heat, stirring to dissolve the sugar. Allow it to simmer for 5 minutes or until slightly thickened.
Remove from heat and strain the syrup through a fine-mesh sieve into the wild berries, discarding the solids.
Step 2: Combining with Gelatin
Soak the gelatin sheets in cold water for 5 minutes to soften. Once softened, gently squeeze out the excess water and add the gelatin to the warm berry mixture, stirring until completely dissolved.
