This recipe serves four and is perfect for a weekend gathering with friends or family.
Ingredients
- Salmon - 500g, skin removed and sliced into fillets
- Coconut Milk - 400ml can
- Kaffir Lime Leaves - 5 leaves, finely chopped
- Ginger - 2 inch piece, grated
- Garlic - 3 cloves, minced
- Lemongrass - 1 stick, finely chopped
- Avocado - 1 large, diced
- Cilantro - 1 bunch, chopped
- Lime - 2, juiced
- Honey - 1 tablespoon
- Salt - to taste
- Black Pepper - to taste
- Quinoa - 1 cup
- Mixed Greens - 200g
- Olive Oil - 2 tablespoons
- Soy Sauce - 1 tablespoon
Preparation
1. Marinade the Salmon
In a bowl, combine lime juice, honey, soy sauce, and a pinch of salt and black pepper. Add the salmon fillets and let them marinate in the fridge for 30 minutes.
2. Cook the Quinoa
Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a boil and add the quinoa. Reduce the heat and let it simmer until the water is absorbed and the quinoa is fluffy. This should take about 15 minutes. Set aside.
3. Prepare the Coconut Sauce
In a saucepan, heat olive oil over medium heat. Add the garlic, ginger, and lemongrass, then sauté until fragrant. Add the coconut milk and kaffir lime leaves. Let it simmer, stirring occasionally until slightly reduced and thickened. Season with salt and black pepper.
Cooking Process
1. Grill the Salmon
Preheat your grill or a grilling pan over medium-high heat. Remove the salmon from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a nice char.
2. Assemble the Bowl
In serving bowls, start by placing a layer of mixed greens. On top of that, add a scoop of cooked quinoa, followed by a grilled salmon fillet. Drizzle with the prepared coconut sauce.
3. Add Freshness
Top with diced avocado and a generous sprinkle of cilantro for garnish. Add more lime juice for an extra zesty kick if desired.
Enjoying the Meal
The Pacific Green Fusion is best enjoyed fresh and hot. The combination of the creamy avocado, tender salmon, and the fragrant coconut sauce together with the nutty quinoa offers a delightful balance of flavors and textures. Serve with a side of crusty bread to soak up every bit of the rich and aromatic sauce.
