Pasapasa Sauté
Introduction to Pasapasa Sauté
Pasapasa Sauté is a flavorful dish inspired by the vibrant cuisines of the Mediterranean and North African regions. The name "Pasapasa," derived from a colloquial term meaning "a mix of culture and taste," reflects its fusion essence. This hearty yet elegant sauté features a melange of bell pepper, zucchini, chicken breast, and spices that are staples in many traditional recipes. The dish offers a balanced bouquet of flavors and textures, making it a staple for family gatherings and festive occasions.
Ingredients
- Chicken breast - 500g, diced
- Olive oil - 3 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 large, sliced
- Bell pepper - 1 each of red, yellow, and green, sliced
- Zucchini - 2 medium, sliced into half-moons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
- Parsley - a handful, chopped
Preparation
Step 1: Marinate the Chicken
In a large bowl, mix the diced chicken breast with cumin, paprika, coriander, salt, and black pepper. Let it marinate for at least 30 minutes to absorb the spices fully.
Step 2: Preparing the Vegetables
While the chicken breast is marinating, slice the onion and bell peppers. Cut the zucchini into half-moons. Mince the garlic and squeeze the lemon to prepare its juice.
Cooking Process
Step 1: Sauté the Chicken
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the marinated chicken breast and cook until golden brown and cooked through, which should take about 7-10 minutes. Remove the chicken from the skillet and set aside.
Step 2: Cook the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Sauté the onion until translucent, then add the minced garlic and cook for another 30 seconds until fragrant. Add the bell peppers and zucchini to the skillet. Stir occasionally and cook until the vegetables are tender-crisp, about 5-7 minutes.
Step 3: Combine and Finish
Return the cooked chicken breast to the skillet with the vegetables. Drizzle in the lemon juice and sprinkle chopped parsley over the top. Stir to combine all the ingredients, cooking for another 2 minutes. Adjust seasoning with salt and black pepper as needed.
How to Enjoy
Pasapasa Sauté is best enjoyed hot and fresh, served alongside warm, crusty bread or a side of couscous to soak up the flavorful juices. Pair it with a glass of light white wine or a refreshing mint tea to complement the aromatic spices. For an extra kick, add a dollop of harissa on the side, providing a spicy contrast to the sauté’s rich flavors.
