A Brief History of Pastel de Feira
Originating from Korea and later adapted in Japan, pastel eventually found its way to Brazil through Japanese immigrants in the early 20th century. Now, Pastel de Feira is a staple in Brazilian street food culture, often enjoyed at local markets or feiras. The dish is beloved for its flaky crust and variety of fillings, making it a versatile snack or meal option.
Ingredients
- Flour - 500g
- Water - 250ml
- Vegetable Oil - 3 tbsp for the dough
- Salt - 1 tsp
- Sugar - 1 tsp
- Ground Pork - 250g
- Ground Beef - 250g
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Green Pepper - 1, diced
- Tomato - 1, diced
- Black Pepper to taste
- Cumin to taste
- Cheddar Cheese - 200g, grated
- Oil for frying
Preparation
Making the Dough
To create the perfect pastry for your Pastel de Feira, start by combining flour, salt, and sugar in a large mixing bowl. Gradually add the water and vegetable oil, mixing until the ingredients form a smooth, elastic dough. Knead the dough on a lightly floured surface for about 5-7 minutes.
Preparing the Filling
Heat a skillet over medium heat and add ground pork and beef. Cook until the meat is browned. Add the onion, garlic, green pepper, and tomato, cooking until soft. Season with black pepper and cumin. Stir in the cheddar cheese until melted and combined.
Assembling the Pastel
Roll out the dough to about 2mm thickness and cut into rectangles. Place a small amount of filling onto each piece. Fold the dough over to enclose the filling, pressing edges firmly with a fork to seal.
Cooking Process
Using a deep pan, heat oil to 180°C. Gently lower a few pastéis into the hot oil, frying for about 2-3 minutes on each side until golden brown. Monitor with a cooking timer to ensure even cooking. Remove and drain on paper towels.
