Pho Tofu Fusion
Pho is a traditional Vietnamese noodle soup known for its flavorful broth and aromatic spices. In this fusion recipe, we incorporate tofu to create a plant-based version that maintains the rich and complex flavors of this beloved dish. Pho has a history dating back to the early 20th century in northern Vietnam, where Vietnamese street vendors sold it as a popular breakfast food. Over time, it has spread globally, with numerous variations being created, including this delightful Pho Tofu Fusion.

- Rice noodles - 200g
- Vegetable broth - 4 cups
- Soy sauce - 3 tablespoons
- Ginger - 1 inch, sliced
- Garlic - 3 cloves, minced
- Star anise - 2 pieces
- Cinnamon stick - 1
- Cloves - 3
- Onion - 1, chopped
- Lime - 1, cut into wedges
- Bean sprouts - 1 cup
- Cilantro - 1/2 cup, chopped
- Thai basil - 1/2 cup, fresh
- Jalapeño - 1, sliced
- Hoisin sauce - for serving
- Sriracha sauce - for serving
Preparation
Step 1: Preparing the Broth
In a large pot, add the vegetable broth, onion, ginger, garlic, star anise, cinnamon stick, and cloves. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes to allow the flavors to meld together. This slow cooking process ensures the depth of flavors that Pho is known for. Set a cooking timer to remind you when to check on the broth.
Step 2: Preparing the Tofu
While the broth is simmering, take the block of tofu and press out any excess moisture. Cut the tofu into bite-sized cubes. In a skillet, heat a tablespoon of oil over medium heat and fry the tofu cubes until they are golden and crispy on all sides. This should take about 10 minutes. Remove the tofu from the skillet and set aside.
Step 3: Preparing the Noodles
Cook the rice noodles according to the package instructions. Usually, this involves soaking them in hot water until they soften, which should take about 5 to 7 minutes. Drain and rinse the noodles with cold water to stop the cooking process and prevent them from sticking together.
Step 4: Assembling the Pho
Strain the broth to remove the vegetables and spices, returning the cleaned broth to the pot. Stir in the soy sauce for additional flavor. Add the fried tofu cubes to the broth and let it heat through.
Serving
To serve, divide the rice noodles among the bowls and ladle the hot broth with tofu over the noodles. Top each bowl with bean sprouts, cilantro, and Thai basil. Add slices of jalapeño for some heat and a squeeze of fresh lime juice for brightness. Serve with hoisin sauce and sriracha sauce on the side for added flavor. Enjoy this Pho Tofu Fusion as a comforting and aromatic meal.
This dish not only pays homage to traditional Vietnamese cuisine but also offers a modern twist that's perfect for those seeking plant-based options. Delight in the symphony of spices and the beautiful textures that make this Pho Tofu Fusion a satisfying experience.
