Pinhão Cremosinho
Pinhão Cremosinho is a traditional dish from the southern regions of Brazil, particularly popular in the states of Paraná and Santa Catarina. This creamy dish is made from pinhão, the seed of the Araucaria tree, which is a symbol of the region. The Araucaria tree, also known as the Parana pine, has been a staple for the indigenous people and later settlers for centuries. Pinhão is typically harvested between April and June and is celebrated during local festas juninas, which are winter festivals that highlight traditional culinary delights.
Ingredients
- Pinhão - 500g
- Milk - 1 liter
- Cream - 200ml
- Parmesan cheese - 100g, grated
- Onion - 1 large, finely chopped
- Garlic - 3 cloves, minced
- Butter - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Nutmeg - a pinch
- Parsley - to garnish, chopped
Preparation
Preparing the Pinhão
The first step in making Pinhão Cremosinho is preparing the pinhão. Begin by washing the seeds thoroughly under running water. Once cleaned, place them in a pressure cooker with enough water to cover them completely. Cook them for about 40 minutes until they become tender. You can check your cooking timer to ensure they don’t overcook. Once done, allow them to cool slightly before peeling. The outer shell should come off easily by making a slit along its length. Set the peeled pinhão aside.
Making the Cream Base
In a large saucepan, melt the butter over medium heat. Add the finely chopped onion and sauté until it's translucent. Add the minced garlic and cook for another minute until fragrant. Then, pour in the milk and bring the mixture to a gentle simmer. Add the cream and grated parmesan cheese, stirring continuously until the cheese has melted smoothly into the sauce.
Combining the Ingredients
Introduce the peeled pinhão to the creamy mixture. Stir well to ensure that the pinhão are evenly coated with the sauce. Season with salt, black pepper, and a hint of nutmeg for added flavor. Allow the mixture to cook on low heat for about 15 minutes, stirring occasionally, until it achieves a thick creamy consistency. Monitor with a cooking timer for perfect consistency.
How to Enjoy
Serve the Pinhão Cremosinho hot, garnished with freshly chopped parsley. This rich and aromatic dish pairs beautifully with a light green salad or crusty bread to soak up the creamy sauce. Traditionally, it is enjoyed during the cooler months as a comforting main course, ideal for family gatherings or festive occasions. Its unique nutty flavor from the pinhão makes it a conversation starter at any dinner table.
