Pudina Pulao
Background and History
Pudina Pulao, a fragrant and refreshing rice dish, has its roots deeply embedded in Indian cuisine. Originating from the Indian subcontinent, the dish highlights the abundant use of mint leaves, known as Pudina in Hindi, which not only imparts a bright green color but also a refreshing taste. Traditionally, this pulao is a part of the royal Awadhi cuisine from Lucknow but has gained popularity across India due to its unique taste and simplicity.

Ingredients
- Basmati Rice - 1 cup
- Mint Leaves - 1 cup
- Ghee - 2 tablespoons

- Ginger - 1 inch piece
- Garlic - 4 cloves
- Green Chillies - 2
- Cumin Seeds - 1 teaspoon
- Cardamom - 2 pods
- Cinnamon - 1 small stick
- Cloves - 3
- Salt - to taste
- Water - 2 cups
Preparation
Step 1: Preparing the Mint Paste
To prepare the mint paste, wash the mint leaves thoroughly to remove any dirt. In a blender, add the mint leaves, ginger, garlic, and green chillies. Blend into a smooth paste using a few tablespoons of water if necessary. Set aside.
Step 2: Soaking the Rice
Rinse the Basmati Rice under running water until the water runs clear. Soak the rice in sufficient water for about 20-30 minutes.
Cooking Process
Step 1: Sautéing the Spices
In a deep pan or pressure cooker, heat ghee over medium heat. Once hot, add cumin seeds and let them splutter. Then, add cardamom, cinnamon, and cloves. Sauté until the spices emit a fragrant aroma.
Step 2: Cooking the Onions
Add the sliced onion to the spices and sauté until they turn golden brown.
Step 3: Adding the Mint Paste
To the sautéed onions, add the prepared mint paste and cook for about 3-4 minutes, or until the raw smell of mint disappears.
Step 4: Cooking the Rice
Drain the soaked rice and add it to the pan. Stir well to coat the rice with the mint mixture.
Pour in 2 cups of water and season with salt to taste. Mix well.
Step 5: Cooking Time
Cover the pan with a lid and cook the rice on low heat for about 15-20 minutes or until the rice is cooked and the water is fully absorbed. You can use a cooking timer to ensure perfect timing.
