Puli Avalakki
Introduction
Puli Avalakki, a delicious and tangy dish originating from South India, is a perfect blend of flavors that reflects the culinary traditions of Karnataka. Known for its simplicity and mouthwatering taste, this dish is often enjoyed as a breakfast item or an evening snack. The word "Puli" means tamarind and "Avalakki" refers to flattened rice or beaten rice. The combination of tamarind with beaten rice not only offers a delightful tang but also tells the story of India's rich culinary history.
Ingredients
- Flattened Rice (Avalakki/Poha) - 2 cups
- Tamarind - lemon-sized ball
- Peanuts - 3 tablespoons
- Urad Dal - 1 tablespoon
- Chana Dal - 1 tablespoon
- Mustard Seeds - 1 teaspoon
- Curry Leaves - 10-12 leaves
- Dry Red Chillies - 2-3
- Turmeric Powder - 1/2 teaspoon
- Jaggery - 1 teaspoon
- Salt to taste
- Oil - 2 tablespoons
- Asafoetida - a pinch
- Fresh Coriander Leaves - for garnish
Preparation
Before diving into the cooking process, it's important to prepare all the ingredients properly to ensure a smooth cooking experience. Begin by soaking the tamarind in warm water for about 15 minutes to extract the juice. Squeeze and filter the pulp, setting it aside in a bowl.
Preparing the Flattened Rice
To prepare the flattened rice, rinse it gently in running water and drain. Set aside for a few minutes to allow it to soften. Thick poha is recommended, as it holds the flavor of the spices better and does not become mushy.
Making the Spice Mix
Heat a pan over medium flame. Add peanuts and dry roast until they turn golden brown. Remove and set aside. Repeat with urad dal and chana dal until they release a nutty aroma and are lightly browned. Remove and allow to cool. Coarsely grind these lightly roasted ingredients, but do not make it into a fine powder. This mix adds an extra crunch and flavor to the dish.
Cooking Process
Time to Cook
Heat oil in a large pan. Add mustard seeds, allowing them to splutter. Add curry leaves, dry red chillies, and a pinch of asafoetida for a versatile aroma. This tempering step is crucial as it enhances the flavor profile of the dish significantly.
Combining the Ingredients
Once the spices release their aroma, stir in the turmeric powder to enhance the color. Pour in the extracted tamarind juice, followed by seasoning with salt and adding the jaggery to balance the tangy flavor. Allow this mixture to simmer until the tamarind rawness dissipates. This process should take about 5 minutes.
Bringing it all Together
Add the softened flattened rice and the coarsely ground spice mix. Gently mix to ensure the spices and tamarind pulp coat the rice evenly. Cook for approximately 3-4 minutes, letting the flavors amalgamate with the flattened rice. Make sure not to over-stir, as this can cause the rice to break.
Garnishing and Serving
Final Touch
Squeeze a little lemon juice if you like extra tanginess and garnish with chopped coriander leaves. Peanuts can also be added as a garnish for an additional crunch. Now, your Puli Avalakki is ready to be served.
