Qashta Baklava
Background and History
Qashta Baklava is a delightful variation of the traditional Baklava, a rich and sweet dessert that originates from Ottoman cuisine, popular in regions of the Middle East and Eastern Europe. The name "Qashta" refers to the unique clotted cream used as a filling, adding a creamy richness to the normally nutty and flaky pastry. Ingredients
- 100g Filo dough
- 100g Butter (melted)
- 200g Pistachios (finely chopped)
- 200g Walnuts (finely chopped)
- 200g Sugar
- 200g Qashta (clotted cream)
- 2 tbsp Rose water
- 1 tbsp Lemon juice
- 250ml Water
Preparation
Preparing the Syrup
To create the perfect sweet glaze, combine sugar, water, and lemon juice in a saucepan over medium heat. Stir until the sugar dissolves completely and the mixture reaches a syrupy consistency. Remove from heat and add the rose water. Allow it to cool.
Layering the Filo Dough
Begin by greasing a baking pan with some melted butter. Lay down the first half of the filo dough sheets, brushing each layer with ample melted butter for that extra richness and crispiness.
Filling with Qashta and Nuts
Spread the qashta evenly over the layered filo. Combine pistachios and walnuts, and sprinkle half of this mixture over the qashta layer, lending the baklava its characteristic crunch.
Completing the Layers
Layer the remaining filo dough sheets over the filling, again brushing each layer with butter. It's crucial to thoroughly butter each layer to achieve the perfect flaky texture.
Cooking Process
Bake in a preheated oven at 180°C (356°F) for approximately 30-40 minutes, or until the top achieves a golden-brown color. Keep an eye on the oven temperature and use a cooking timer to ensure precise baking time. Once baked, remove the Qashta Baklava from the oven and immediately pour the cooled syrup evenly over the hot baklava. Allow the dessert to cool, during which the syrup will penetrate, enhancing the flavor and texture.
