Sabor de Galicia is a traditional dish from the northwestern region of Spain known for its rich culinary heritage and diverse flavors. Ingredients
- 1 kg of assorted seafood (such as clams, mussels, prawns)
- 500 g of potatoes, peeled and cubed
- 1 large onion, chopped
- 4 cloves of garlic, minced
- 2 teaspoons of pimentón (Spanish paprika)
- 4 tablespoons of olive oil
- A handful of fresh parsley, chopped
- Salt and pepper to taste
- 2 bay leaves
- 1 cup of white wine
Preparation
Step 1: Prepare the Seafood
Begin by cleaning the seafood thoroughly. Scrub the clams and mussels under cold water to remove any grit or sand. Remove the beards from the mussels. For the prawns, peel and devein if necessary. Set these aside.
Step 2: Sauté the Aromatics
Heat olive oil in a large pan over medium heat. Add the onions and cook until they become translucent. Add the garlic and sauté for another minute until fragrant.
Cooking Process
Step 3: Build the Base Flavor
Stir in the pimentón and bay leaves to the sautéed onions and garlic. Mix well to combine the flavors, then add the white wine. Allow the mixture to simmer and reduce slightly, intensifying the flavors.
Step 4: Cook the Potatoes
Add the cubed potatoes to the pan. Stir to coat them with the aromatic mixture. Season with salt and pepper to taste. Cover the pan and let the potatoes cook for about 15 minutes or until they start to become tender.
Set a cooking timer for 15 minutes to monitor the potato cooking time.
Step 5: Add the Seafood
Once the potatoes are nearly done, add the seafood to the pan. Cover and cook for another 5-7 minutes or until all the seafood is cooked through and the mussels and clams have opened.

Step 6: Final Touches
Remove the bay leaves from the pan. Sprinkle the dish with freshly chopped parsley before serving to add a touch of freshness.
