Preparation
Setting the Dough
Start by mixing active dry yeast with a tablespoon of sugar and half a cup of warm water. Allow it to rest for about 10 minutes until frothy. In a large bowl, combine 2 cups of all-purpose flour with a teaspoon of salt. Gradually add the yeast mixture and additional warm water until a sticky dough forms. Knead until smooth, cover with a damp cloth, and let it rise in a warm place for approximately one hour or until doubled in size.
Preparing the Syrup
In a saucepan, combine 2 cups of sugar, one cup of water, and a tablespoon of lemon juice. Bring to a boil and let it simmer for 10 minutes. Optional: Add a tablespoon of rose water for a floral aroma. Once the syrup is slightly thickened, remove it from the heat and set aside to cool.
The Cooking Process
Heat vegetable oil in a deep pan or fryer to approximately 350°F (175°C). Use a spoon to drop small balls of the dough into the hot oil. Fry the dough balls until golden brown and crispy, ensuring you turn them evenly. This should take about 4-5 minutes per batch. Use a slotted spoon to transfer the lokmas onto paper towels to drain excess oil.
Soaking in Syrup
Submerge the hot lokmas into the prepared syrup while they are still warm, allowing them to soak for about 2-3 minutes. Ensure they are coated well before transferring them to a serving dish. Optionally, sprinkle crushed pistachios on top for added flavor and texture.
