Ingredients

- Mushrooms - 200g, sliced
- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Cream - 200ml
- Red Wine - 100ml
- Thyme - 1 teaspoon, dried
- Butter - 2 tablespoons
- Parsley - Fresh, for garnish
Preparation
- Preheat your oven to 200 degrees Celsius. In the meantime, season the beef tenderloin with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the beef tenderloin on all sides until it achieves a rich brown color.
- Transfer the beef tenderloin to a baking tray and wrap it with Black Forest ham. Roast in the oven. Use a cooking timer to check after 20 minutes; cook to your preference.
- In the same skillet, melt the butter and sauté the shallots and garlic until translucent.
