Seekh Kabab is a popular South Asian dish known for its spicy and flavorful profile. Originating from the Indian subcontinent, these delectable kababs have roots in the culinary traditions of the Middle East and Central Asia, where similar skewered meats are often served. Over time, Seekh Kabab has become a staple at roadside eateries and high-end restaurants alike.
The word "Seekh" refers to the skewer used to mold the mixture into its iconic cylindrical shape. "Kabab" denotes the grilled or broiled meat preparation. Traditionally made using minced meat, a blend of spices, and fresh herbs, this dish is often enjoyed with a squeeze of lemon, some salad, and chutney.
Ingredients for Seekh Kabab
- Minced Meat (lamb or beef) - 500g
- Onion - 1 large, finely chopped
- Ginger Paste - 1 tablespoon
- Garlic Paste - 1 tablespoon
- Green Chilies - 2-3, finely chopped
- Fresh Coriander - a small bunch, chopped
- Cumin Powder - 1 teaspoon
- Coriander Powder - 1 teaspoon
- Garam Masala - 1 teaspoon
- Red Chili Powder - 1 teaspoon
- Salt - to taste
- Lemon - 1
- Oil - for brushing
- Metal skewers or wooden skewers soaked in water
Preparation of Seekh Kabab
Step 1: Prepare the Meat Mixture
Begin by combining the minced meat in a large bowl with chopped onion, ginger paste, and garlic paste. Mix in the green chilies, fresh coriander, cumin powder, coriander powder, garam masala, and red chili powder. Season the mixture with salt to taste.
Mash everything together using your hands to ensure that the spices and herbs are well incorporated into the meat. The more you mix, the more flavorsome your Seekh Kabab will be. Set aside to rest for at least 30 minutes to allow the flavors to meld.
Step 2: Shape the Kababs
Once the meat mixture has rested, take a handful of the mixture and form it around a skewer. Use your palm to shape it evenly while ensuring the meat clings to the skewer tightly. Continue with the rest of the mixture.
Cooking Process of Seekh Kabab
Grilling the Kababs
Preheat your grill or set the oven timer to preheat. Lightly brush the kababs with oil to prevent sticking.
If using a grill, cook the kababs on medium-high heat for about 10-15 minutes, turning occasionally, until they are evenly cooked and charred in places.
For an oven, place the kababs on a baking tray and bake at 220°C (428°F) for 15-20 minutes. Ensure even cooking by turning them halfway through.
