Step 1: Prepare the Pastry Base

Start by preheating your oven to 200°C (390°F). Roll out the puff pastry on a floured surface to fit a pie dish. Carefully lay the rolled pastry in the pie dish and trim excess edges. Chill the pastry base in the refrigerator while you prepare the shakshuka filling.

Step 2: Cook the Shakshuka Filling

In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent. Stir in the red bell pepper and cook until softened. Add the minced garlic and sauté for another minute, making sure it doesn’t burn. Sprinkle in the cumin and paprika, stirring to combine with the vegetables.

Next, add the tomatoes and tomato paste to the skillet. Season with salt and pepper. Allow the mixture to simmer until it thickens and the flavors meld, approximately 10-15 minutes. Adjust seasoning if needed.

Step 3: Assemble the Pie

Remove the pastry base from the refrigerator. Spoon the shakshuka filling into the pastry shell, spreading it evenly. Using the back of a spoon, make four indentations in the filling for the eggs. Crack an egg into each indentation, being careful not to break the yolk.

For additional neatness, you can create a lattice top using additional strips of puff pastry, though this step is optional.

Step 4: Bake the Pie

Place the assembled pie in the preheated oven. Bake for 20-25 minutes, or until the eggs are set to your liking and the pastry is golden brown. If you find the crust browning too soon, cover the edges with foil.

Serving Suggestions

Once the cooking time is complete, allow the pie to cool slightly before serving. Garnish with freshly chopped parsley for added color and freshness.
