Preparation
Step 1: Preparing the Scallops
Begin by ensuring the scallops are thoroughly cleaned. Pat them dry with a paper towel. Prepare a marinade using soy sauce, sake, and mirin. Add grated ginger and minced garlic to the marinade. Submerge the scallops in this mixture and let them sit in the refrigerator for 30 minutes.
Step 2: Preparing the Rice
While the scallops are marinating, prepare the sticky rice. Rinse the rice under cold water until the water runs clear. Cook the rice according to package instructions or until it reaches a sticky texture.
Step 3: Preparing the Vegetables
Slice the shiitake mushrooms and finely slice the spring onions. Heat sesame oil in a skillet over medium heat. Add the mushrooms and seaweed, stirring until the mushrooms are tender.
Complete Cooking Process
After marinating the scallops, heat a pan over medium-high heat. Remove the scallops from the marinade and sear them in the skillet, about 1 to 2 minutes on each side until they are golden. Remove from pan and set aside.
In the same pan, pour the remaining marinade, add fish broth, and bring to simmer. Return the scallops to the pan and let them simmer for 5 minutes. Cooking Timer.
