Sichuan Embers Tofu is a flavorful dish that originates from the Sichuan province of China, known for its bold and complex flavor profile. Ingredients
- Tofu - 500g, preferably firm.
- Sichuan peppercorns - 2 teaspoons, freshly ground.
- Chili bean paste (Doubanjiang) - 3 tablespoons.
- Ginger - 1 inch, minced.
- Garlic - 3 cloves, minced.
- Spring onions - 2, chopped.
- Vegetable oil - 3 tablespoons.
- Soy sauce - 2 tablespoons.
- Cornstarch - 1 tablespoon mixed with 2 tablespoons water.
- Chicken broth or vegetable broth - 1 cup.
- Sugar - 1 teaspoon.
- Sesame seeds - 1 tablespoon for garnish.
- Rice - Cooked, for serving.
Preparation Steps
Begin by preparing the tofu. Press it using a tofu press or by placing it under a weighted plate for about 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
Mix the cornstarch and water in a small bowl to create a slurry. Set aside for thickening the sauce later.
Prepare the aromatic ingredients: mince the ginger and garlic, and chop the spring onions.
Cooking Instructions
Heat a large non-stick or cast-iron skillet over medium-high heat, adding 2 tablespoons of vegetable oil. Once hot, add the tofu cubes. Cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
In the same pan, add the remaining tablespoon of vegetable oil and sauté the ginger and garlic until fragrant, about 1 minute.
Stir in the chili bean paste and briefly cook to release its oils and aroma.
Add the Sichuan peppercorns, soy sauce, and sugar. Stir well to combine and create a thick base.
Pour in the chicken broth or vegetable broth, bring it to a simmer, then add the tofu back into the pan.
Simmer for 5 minutes to allow the flavors to meld. Then, add the cornstarch slurry, stirring to thicken the sauce to a silky consistency.
Finish by tossing in the chopped spring onions, reserving some for garnish.
