Solterito de Quinoa Recipe
Solterito de Quinoa is a vibrant and refreshing Peruvian dish that encapsulates the rich agricultural heritage of the Andes. Traditionally, the recipe features corn and beans, showcasing the region's ancient crops and cultural flavors. The dish's name, 'Solterito', translates to 'little single one', referring to its origins as a light, unmarried fare offered at festivals and celebrations. With the addition of quinoa, a superfood mountainous grain revered by the Incas, this nutritious salad is packed with protein and flavors.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup corn (fresh or frozen)
- 1 cup lima beans (fresh or frozen)
- 1/2 cup red onion, finely chopped
- 1 cup tomato, diced
- 1/2 cup black olives, sliced
- 1/2 cup queso fresco or feta cheese, cubed
- 1 red bell pepper, diced
- 1/4 cup extra virgin olive oil
- 3 tablespoons cilantro, chopped
- 2 tablespoons white vinegar
- Salt and black pepper to taste
- 1 lime, juiced
Preparation
Step 1: Prepare the Quinoa
Begin by rinsing the quinoa under cold water to remove its natural coating, saponin, which can make it taste bitter. Bring 2 cups of water to a boil in a medium saucepan. Add the rinsed quinoa and lower the heat to a simmer. Cover and let it cook for about 15 minutes, or until the quinoa has absorbed all the water. Remove from heat, fluff the quinoa with a fork, and set aside to cool.
Step 2: Cook the Corn and Beans
In a separate pot, bring water to a boil. Add the corn and lima beans, cooking for about 5-7 minutes, or until tender. Drain the corn and lima beans and rinse under cold water to stop cooking; this will also preserve their bright color. Set aside to cool.
Step 3: Assemble the Solterito
In a large mixing bowl, combine the cooled quinoa, corn, and lima beans. Add the red onion, tomatoes, black olives, queso fresco, and red bell pepper. Gently toss the ingredients together.
Step 4: Prepare the Dressing
In a small bowl, whisk together the extra virgin olive oil, white vinegar, fresh lime juice from one lime, and finely chopped cilantro. Season the dressing with salt and black pepper to taste.
Step 5: Combine and Serve
Drizzle the prepared dressing over the quinoa mixture. Toss gently to ensure all the ingredients are evenly coated with the dressing. Let the Solterito de Quinoa sit for at least 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
