Spicy Jollof Casserole
Background and History
Jollof is a beloved dish throughout West Africa, particularly in Nigeria, Ghana, and Senegal. The origins of Jollof rice can be traced back to the Senegambian region, a historical powerhouse that consisted of present-day Senegal, the Gambia, and parts of Mauritania and Mali, during the 14th century. The dish is named after the Wolof people. Jollof has evolved over time with regional variations, often sparking spirited debates over which country makes it best. This Spicy Jollof Casserole is a modern twist on the traditional Jollof rice, offering a hearty and comforting dish that's perfect for gatherings or weeknight dinners.
Ingredients
- Rice - 2 cups
- Chicken (boneless, skinless breasts or thighs) - 500g
- Tomato puree - 1 cup
- Red bell peppers - 2, chopped
- Onions - 2, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Chili peppers - 2, finely chopped
- Thyme - 1 teaspoon
- Curry powder - 1 tablespoon
- Vegetable oil - 3 tablespoons
- Chicken stock - 3 cups
- Salt - to taste
- Black pepper - to taste
- Bay leaf - 2
- Peas - 1 cup
- Carrots - 1 cup, diced
Preparation
Start by preparing the chicken. Season it with salt and black pepper, then set aside. In a large pot or deep skillet, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, sautéing them until soft and fragrant. Add the tomato puree, chopped red bell peppers, and chili peppers, cooking until the oil begins to separate from the tomato mixture.
Complete Cooking Process
Add the seasoned chicken to the pot with the mixture of spices including thyme and curry powder. Let the chicken brown slightly, ensuring it is well-coated with the spiced tomato mixture. Pour in the rice, stirring to blend with the chicken and tomato base. Gradually add in the chicken stock, then add the bay leaf and adjust seasoning with more salt and black pepper if needed. Cover with a lid and allow to cook for about 15-20 minutes, checking occasionally, until the rice is tender and the mixture is thickened to your preference. Add the peas and carrot, stir through and cook for another 5 minutes until vegetables are heated and tender.
Once the casserole is cooked, remove it from the heat and allow it to rest for a few minutes. This not only allows the flavors to meld more but also makes it easier to serve.
Throughout this process, consider using a cooking timer to ensure precision and avoid overcooking.
