Preparation
- Start by preparing the vegetables. Peel and slice the carrots into thin rounds. Chop the bok choy into bite-sized pieces. Mince the ginger and garlic finely.
- Cut the tofu into cubes, about 1-inch in size. Make sure the tofu is well-drained to remove excess moisture, which can be done with a clean kitchen towel.
Cooking Process
- In a medium pot, bring the vegetable broth to a boil. Add in the sliced carrots and simmer for about 5 minutes until they begin to soften.
- Add the minced ginger and garlic to the pot. Stir well and let them simmer in the broth for another 2 minutes to infuse their flavors.
