Ingredients
- All-Purpose Flour
- Dry Yeast
- Granulated Sugar
- Lukewarm Milk
- Butter
- Egg

Preparing the Dough
- In a bowl, combine dry yeast with a tablespoon of granulated sugar and half a cup of lukewarm milk. Let it sit for about ten minutes until frothy.
- In a large mixing bowl, combine two and a half cups of all-purpose flour, the yeast mixture, an egg, three tablespoons of melted butter, the remaining sugar, and a pinch of salt.
- Knead the mixture into a smooth dough. It should be slightly sticky but manageable. Add more flour if needed.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about an hour until it doubles in size.
Making the Ganache
- In a saucepan, warm half a cup of heavy cream.
- Pour it over a bowl of eight ounces of chopped dark chocolate mixed with a teaspoon of cinnamon. Let sit for a minute, then stir until smooth.
- Allow the ganache to cool slightly before placing it in the refrigerator to set.
Shaping and Frying
- Once the dough has risen, roll it out on a floured surface to about half an inch thick.
- Use a cookie cutter to cut out circles. Cover and let these rest for another thirty minutes.
- In a deep frying pan, heat vegetable oil to 350°F. Use a cooking timer for accuracy.
- Fry the doughnuts until golden brown on each side, approximately two to three minutes per side.
- Remove and drain on paper towels. Let them cool slightly.
Filling the Doughnuts
- Transfer the cooled cinnamon ganache into a piping bag with a nozzle.
- Poke a hole into each doughnut and carefully pipe in the ganache until full.
Finishing Touch
Sift a generous amount of powdered sugar over the filled sufganiyot.
