Ingredients
- Octopus - 200 grams, cleaned and tenderized

- Daikon - 1 small, thinly sliced
- Wakame - 1 tablespoon, rehydrated
- Scallions - 2, finely chopped
- Sesame Oil - 1 tablespoon
- Tofu - 100 grams, cubed
- Sesame Seeds - 1 tablespoon, toasted
- Udon Noodles - 200 grams, cooked
- Nori - 1 sheet, thinly sliced
- Red Miso - 1 tablespoon
- Dashi - 500 milliliters
Preparation
- Start by preparing the octopus. If it's not pre-tenderized, you'll need to tenderize it by gently pounding it or rubbing it with salt. Set aside.
- In a small bowl, combine the soy sauce, mirin, sake, and sugar. Stir until the sugar is completely dissolved.
- Add the freshly grated ginger and minced garlic into the sauce. Mix well and set aside.
- Thinly slice the daikon and soak the wakame in water to rehydrate it. Once rehydrated, drain and squeeze out excess water.
Cooking Process
