Preparation
Filling Preparation
- Peel and boil one potato until soft. Drain and mash it in a large bowl.
- Meanwhile, heat a tablespoon of cooking oil in a pan.
- Add one teaspoon of cumin seeds and let them crackle.
- Add one chopped onion and sauté till golden brown.
- Mix in one tablespoon of tamarind paste, one teaspoon of coriander powder, half a teaspoon of garam masala, and a pinch of red chili powder.
- Stir in the mashed potato and half a cup of peas. Mix well and season with salt to taste.
- Add one tablespoon each of minced garlic and minced ginger.
- Cook the mixture on a low flame for about 5 minutes until the flavors marry well into the filling.
- Turn off the heat and let it cool completely.
Pastry Assembly
- Preheat your oven to 400°F (about 200°C). Set a timer for precise baking.
- Roll out the puff pastry sheets on a lightly floured surface.
- Cut the pastry sheet into equal squares, typically 3x3 inches.
- Place a spoonful of the prepared filling in the center of each square.
- Fold the pastry diagonally to form a triangle or fold all corners towards the center to resemble a classic puff form.
- If you are using an egg for egg wash, beat the egg and lightly brush it over the pastry for a golden finish.
- Place the pastries on a baking tray lined with parchment paper.
- Bake for about 20 minutes or until the pastries are puffed up and golden brown.
