Ingredients

- Dark chocolate - 50g, shaved
- Vanilla extract - 1 teaspoon

Preparation
- Begin by brewing a strong espresso and then let it cool. While it cools, prepare the mascarpone cheese mixture.
- In a mixing bowl, combine the egg yolks and sugar and beat until the mixture is thick and pale. Mix in the mascarpone cheese and vanilla extract until smooth.
- In a separate bowl, whisk the egg whites with a pinch of salt until they form soft peaks. Gently fold the whites into the mascarpone mixture.
- In a shallow dish, combine the cooled espresso and rum. Quickly dip each savoiardi biscuit into the coffee mixture.
Assembling the Tiramisu
- Line the bottom of a rectangular dish with a layer of soaked savoiardi biscuits. Spread half of the mascarpone mixture over the biscuits.
