This dish is often prepared for festive occasions or family gatherings where it stands as a testament to the communal spirit of sharing.
Ingredients
- Flour - 500g
- Butter - 200g
- Sour Cream - 200ml
- Egg (yolk) - 1
- Egg (for washing) - 1
- Ground Beef - 400g
- Onion - 1 large
- Potatoes - 2 medium
- Salt - 1 tsp
- Black Pepper - 1 tsp
- Beef Bouillon - 100ml
- Milk (optional for brushing) - 50ml
Preparation
Step 1: Prepare the Dough
In a large mixing bowl, add the flour and a pinch of salt. Cut the chilled butter into small cubes and incorporate it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add the sour cream and blend until a dough begins to form. Roll the dough into a ball, wrap it in plastic, and chill in the refrigerator for at least 1 hour.
Step 2: Prepare the Filling
While the dough is chilling, finely chop the onion and potatoes. In a bowl, combine the chopped onion, potato, and ground beef. Season the mixture with salt and black pepper, mixing thoroughly. Allow the filling to rest for 30 minutes.

Step 3: Roll Out the Dough
Preheat your oven to 180°C (356°F). Remove the chilled dough from the refrigerator and on a floured surface, roll it out to a thickness of about 5mm. Using a large cutter or a knife, cut out circular shapes for the base of the pastry.
Step 4: Fill and Fold
Place a spoonful of the filling onto each circle. Be sure not to overfill to ensure you can seal the edges. Carefully fold each circle in half to form a semi-circle and crimp the edges tightly to seal. Use the egg wash prepared by beating an egg and lightly brush it over the pastries. If desired, you can also brush with milk for a richer color.

Step 5: Baking
Place the prepared pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until they turn a golden brown. As you bake, ensure you check them closely towards the end of the cooking time period to avoid burning. More details on timing can be found here.
Step 6: Finish with Broth
After about 20 minutes, gently open each pastry by peeling back the top layer, pour a tablespoon of beef bouillon into each pastry, and reseal. Allow them to finish cooking.
