Ingredients
- Jasmine Rice - 1 cup
- Firm Tofu - 200g
- Carrots - 2 medium-sized, julienned
- Baby Spinach - 1 cup
- Shiitake Mushrooms - 100g, sliced
- Avocado - 1, sliced
- Soy Sauce - 2 tbsp
- Mirin - 1 tbsp
- Sesame Oil - 1 tbsp
- Pickled Ginger - 2 tbsp
- Sesame Seeds - 1 tbsp, toasted
- Nori - Thinly sliced, for garnish
Preparation
Preparing the Jasmine Rice
Rinse the jasmine rice thoroughly in cold water until the water runs clear. Cook the rice using a rice cooker or on a stovetop following the package instructions. Once cooked, fluff it gently with a fork and set aside.
Preparing the Tofu
Place the firm tofu on a paper towel-lined plate and cover with more paper towels. Press lightly with a weight to drain excess moisture for at least 30 minutes. Cut into bite-sized cubes.
